chocolate zucchini bread

chocolate chip/chocolate zucchini bread

3 cups flour
1/4 cup unsweetened cocoa
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
2 cups sugar
3 large eggs
1 cup vegetable oil
2 cups zucchini, grated and peeled
1 cup chopped nuts (optional)
1 cup semi-sweet chocolate chips

preheat oven to 350. grease two loaf pans and set aside.
in large bowl combine first six ingredients, mix well and set aside. in medium bowl combine sugar and eggs. beat until blended.
add oil and vanilla beat until combined. add zucchini and stir.
add to flour mixture. stir until just moistened. stir in nuts and chips. spoon batter evenly into loaf pans.
bake 55-60 minutes, or until toothpick inserted in center comes out clean. cool in pans 10 minutes. then remove from pans. cool completely on wire racks.
makes 2-4 loaves depending on pan size.

Chocolate zucchini bread - yummy! I have an over abundance of zucchini right now, so this will be great. The family is already tired of regular zucchini bread.

I was thinking that the zucchini bread sounded good. Something to do with the girls when we get back from the beach. But now...I am thinking that I will surely be able to get them on board with the addition of chocolate...

Curse you! I made it, it's good, and I ate 1/4 of one loaf. Ughhhh.... I'm such a food addict.
